A Welsh classic - Bara brith

A beautiful traditional Welsh treat.
We found this fantastic fruit loaf when moving to our new home in wonderful West Wales.
From over the boarder in England we would have called it a tea loaf. Either way it is yummy.
All you need is

Ingredients
3 strong tea bags
300ml boiling water
170g soft brown sugar
225-250g dried mixed fruit
225g self raising flour
1/2 teaspoon mixed spice
1/2 teaspoon ground cinnamon
1 large egg
Preparation method
Brew the tea bags in boiling water for 5 minutes, remove the tea bags whilst the tea is still hot add the sugar stir until dissolved.
Pour the sweet tea over the dried fruit cover and leave to stand overnight.
Mix together all of the dry ingredients slowly stirring in the egg, soaked fruit and remaining sweet tea.
When the mixture has come to a thick cake-like mixture pour the mixture into a lightly greased and bottom-lined 900g loaf tin.
Place into a preheated oven at 170°C for 1 hr 30 mins - 1 hr 45 mins.
Leave to stand for 10 minutes before turning out the cake onto a cooling rack.
Just yummy.
Sneak a bit while warm or save for a family treat. Serve just as it is or with a little local butter.
