Too much Lettuce to handle

Its that time of year when you have been waiting for ages for the growing to get going and then all of a sudden you have to much to handle.
This is where we are in the Doughtastic Polytunnel. Lettuce is the challenge but we have the solution.

Lettuce, Pea and Mint Soup
Fantastic to eat fresh, add to pasta as a sauce, or freeze for later.
All you need is
Ingredients
A big pile of the lettuce
A vegi stock cube or two
A bag of frozen peas
onion (optional)
boiling water to cover the veg
Mint Sauce
Seasoning to taste
Preparation method
Put Lettuce in a big pan (after washing it ;-) )
Add stock Cubes
Add a bag of frozen Peas
Add chopped Onion (optional)
Cover Vegi's with boiling water. Bring to the boil and then simmer until all cooked
Remove from heat and take out most of the stock and keep to one side
Blend everything in the pan. Start to add the stock back in a little at a time until you are happy with the consistency.
Add mint sauce to the soup to taste along with seasoning.
Just yummy.
